Quick and Easy Vegetable Frittata

This is a very nutritious dish that’s quick and easy to make using leftover vegetables. Breakfast, quick lunch or even a light supper - there's no excuse for not eating your veggies with this one! Eggs are a great source of good quality protein. I use mushrooms, sweet potatoes and broccoli, but you can pretty much use whatever you have leftover such as carrots, courgettes, peppers, greens, etc. By using lots of different coloured vegetables you are getting a good variety of nutrients – eat a rainbow!

Serves: 2 portions / cooking time: approx. 10 minutes

Butter for cooking

4 large closed cup mushrooms

150g cooked broccoli florets (leftovers)

250g roasted sweet potato (leftovers)

6 organic/free-range eggs

Black pepper & sea salt to taste

  1. Gently sauté the mushrooms, broccoli and sweet potatoes in a little butter in a small frying pan for 2/3 minutes.

  2. Beat the eggs in a bowl and add the black pepper and sea salt.

  3. Once the mushrooms are cooked through add the egg mixture to the frying pan and let it cook gently for 4/5 minutes or until the egg mixture starts to harden.

  4. Pop the pan under a hot grill for 2/3 minutes until cooked.

  5. Eat!

Nutrition MOT

Following a period of illness I decided to take my life in hand and decided that my diet needed an overhaul. As a family we have adapted the changes easily into our busy lives and have enjoyed the meals from the menu plan. It has made us look more carefully at the foods we are buying. If you’re reading this, you’re obviously contemplating looking at your diet. I would definitely recommend Donna to help you with this.

Gut Healing Programme

I contacted Donna because I had health issues and a poor diet. I'm so pleased I did as she helped me change my diet and I now feel so much better with her support. In fact, I was so impressed that I advised my daughter to see Donna, and she in turn has recommended Donna to her friend. Overall Donna is competent and understanding, easy to talk to and sympathetic to a person's needs. I would give her a 5 Star rating *****
